Instructions
Rinse rice in a strainer. In a rice cooker, add equal parts rice and water. Cook for 20 mins until water evaporates. Let sit for 10 mins.
Simmer vinegar, sugar, and salt for 3 mins. Pour over rice and fold gently.
Place mat, add nori, damp hands, spread 30g rice, then flip (rice outside).
Place cucumber, avocado, crabsticks, then spread mayo & sriracha sauce.
Roll forward, tucking ingredients tightly.
Coat with crunchy corn and slice into bite-sized pieces.
